A delicious and healthy dessert perfect for the coming hot summer evenings.
The frozen yogurt is served with a refreshing fruit salad of strawberries and mango. If you do not have an ice cream machine, you can put the mix in the freezer and stir regularly until it gets the right consistency.

Ingredients (serves six)
Salsa
17,6 oz. (500 g) strawberries
One large mango
2,6 oz. (75 g) sugar
Lemon juice
Frozen Yogurt
2,1 cups (5 dl) yoghurt
5,3 oz. (150g) sugar
0,6 oz. (1.5 dl) water
Zest from two lemons, grated
2,1 oz. (60 g) syrup
2 gelatin leaves
Method
Salsa: Cut mango and strawberries into fine cubes and mix with sugar to taste. Season with lemon juice.
Frozen yoghurt: Boil water, sugar and lemon zest, and add soaked gelatin leaves. Cool to room temperature, sieve and mix with yogurt. Taste with syrup.
Run the ice cream machine until it is completed or put in the freezer and stir regularly until the ice has the right consistency.
Serve the frozen yoghurt on top of the salsa and serve.
