150 g (5.3 oz) pork liver
100 g (3.5 oz) pork meat with fat
4 anchovy fillets
1 ½ dl (0.6 cups) milk
3 tablespoons flour
1 ½ teaspoon salt
½ teaspoon pepper
½ teaspoon ground allspice
1. Clean the liver and divide it into smaller pieces.
2. Cut meat and onions into small pieces and run in a food processor with liver and anchovies.
3. Add the remaining ingredients and blend until the mix is smooth.
4. Put the mix in a greased dish and bake in water bath at 175 º C (347 F) for approx. 1 hour. The liver pate is finished when the cooking thermometer shows 76 º C (24 F). Garnish with aspic and crispy bacon on top.
