A recent report from the Norwegian Directorate of Health shows that the Norwegian people eat more vegetables and less sugar than ever before.
The intake of fruits and berries fell slightly from 2010 to 2011, and Norwegians ate 4.4 lbs (2 kg) more vegetables in 2011 compared with the year before. In total, Norwegians consumed 355 lbs (161 kg) of fruit and vegetables in 2011.
In comparison, the average American ate 310 lbs (140 kg) fresh fruit and vegetables in 2009.
This recipe works more as an inspirational guideline concerning what fruits you should use. Visit your local supermarket and pick out your favorites – or try something new and exotic!
Baked Fruits with Honey
2 fresh figs
3 plums
1/2 cantaloupe
3 fresh apricots
2 passion fruit
3 tablespoons honey
Sprinkle of powdered sugar before serving
Preheat oven to 392F (200C) degrees.
Cut the different fruits into 2 or 4 pieces. Place them in an ovenproof dish and spread the honey on top. Bake them in the oven for approx. 15 minutes until the fruits are soft all the way through. Sprinkle with powdered sugar and serve with ice cream or whipped cream. Delicious!
