Adding a spoon of rowanberry jelly to your dinner makes an exclusive meal. Oh no, not the one you buy in the store, but homemade of course. Here is a very simple recipe for homemade rowanberry jelly that tastes heavenly!
Ingredients (Makes 5 medium size jars)
3 cups rowanberry juice (5 deciliters)
3 cups blackcurrant juice (5 deciliters)
5 cups sugar (8 deciliter)
10 drops lemon
2 oz Certo fruit pectin (60 grams)
Method
Locate the best tree and collect 6 cups of rowanberries. Remove all stems and leaves. Boil the berries soft in some water. Squeeze out the moisture and strain as much as possible of the liquid from the berries.
Mix the liquid and blackcurrant juice. Add lemon drops and fruit pectin. Let it boil for 1 minute. Add sugar and stir until it has dissolved.
Remove the foam and pour the mixture into clean, boiled jars. Fill them up and cover with a lid. Leave the jars upside down until they are cool. Keep them in a dark place.
This is the perfect Christmas gift or hostess gift – cover with a cloth and a silk ribbon. Write a note with contents and date.
