Blue Mussels Steamed in White Wine with Curry

blåskjell smak av kystenBlue mussels are found all along the Norwegian coastline and is perfect summer food. Try this simple, healthy and delicious dish accompanied by a chilled, dry white wine.

Snacks / appetizer for 2 persons

Ingredients

1 kg (2.2 lbs) fresh blue mussels
1 cup white wine
3-4 cloves garlic, finely chopped
2 shallots, finely chopped
1 tablespoon curry powder
1 handful curled parsley, finely chopped
4 tablespoons olive oil

 

Method

Rinse and wash the mussels well under cold running water. Sauté shallots, garlic and curry powder in olive oil in a pan. Add the blue mussels and white wine, cover and steam until the shells open. Discard any mussels that haven’t opened, sprinkle with parsley and serve with some good bread.
